USU PHARMACY PR - Lecturers of the Faculty of Pharmacy of the Universitas Sumatera Utara (USU) conducted community service activities with the theme “Beet Fruit Processing Education Through Making Drinks and Health Foods in the Context of Utilizing Farm Products in the Health Sector to Increase People’s Income.” This activity was held in Semangat Village, Merdeka District, Karo Regency, North Sumatra.

This service activity was carried out by the USU Faculty of Pharmacy Lecturers Team led by Prof. Dr. rer.nat. “This service is carried out so that the community, especially beetroot farmers, can not only sell beets in the market directly but can also process them into drinks and healthy foods that have higher selling value,” explained the Head of the Service Team, Prof. Dr. rer.nat. This activity began with implementing a pre-test to the community to determine their basic knowledge about the material to be delivered. The material presented included the benefits and processing of beetroot to increase farmers’ income.

Dr. Emil Salim, S.Farm., M.Sc., Ph.D., Apt., in his presentation, explained, “Beetroot does have an unpleasant odor, but it contains a lot, ranging from flavonoids to carbohydrates, vitamins, iron, and others.”

“There are so many benefits from processing this beet fruit, starting from improving and maintaining health to increasing the income of the surrounding community,” added Henny Sri Wahyuni, S.Farm., M.Si., Apt. When explaining the material through videos of making dodol and syrup.

The women who attended this community service activity also played an active role in making dodol and syrup. They were provided with material on product marketing techniques, namely packaging and digital marketing, delivered by Sri Yuliasmi, S.Farm, M.Si., Apt. with the hope that after this training program, women in Semangat Village will be interested in developing beetroot as an opportunity for entrepreneurship so that it can provide additional income for the family.
